Let's Eat #2, (Waitrose easy) brownies
I do like to bake cakes from scratch but I must admit, my gluten free cakes can be a little hit and miss! Sometimes. if you are in a hurry or if you need to know that your bake is going to be a success, you need to turn to a packet mix! Last night was just one of those situations! The PTA at my daughter's school had arranged a Macmillan coffee morning and I had offered to make some cakes but by the time I had got home from work, put the children to bed, had dinner, tidied up etc etc (you know what it's like!!), it was 10pm and I still hadn't made the cakes. Argh!!
I didn't have time to re-make any not-so-good batches, so I turned to the trusty Waitrose
packet mix. I can always count on this to make really quick, really yummy brownies! You need little more than a whisk, 2 eggs, some milk and some butter and hey presto, they're done! Amazing!
I couldn't comment on whether they tasted better before or after they were cooked............................. OK, I'm fibbing.....
they taste great before and afterwards!!!! but they are made in about 10 minutes and cook in 25 so in my book, that's good. :)
The coffee morning was a huge success. People said my brownies were yummy?! The Little Coeliac and her brother certainly thought they were at breakfast time when we were packing them up to take them to school (we did leave more than 4 in the box!!)!! And I'm biased so I can't really comment, but I thought they were pretty scrumptious! :)
Everyone was very generous in both bringing and buying cakes and we made lots of money for a fantastic cause which was great.
I will definitely be keeping a box of this trusty mix in the cupboard for the next time I have a baking emergency! x
