Let's Eat #3, banana bread

I wasn't planning to bake anything this weekend, we had family here for the day today and I didn't think we would have time for baking so I hadn't planned anything but we found ourselves with an hour to spare, I saw some bananas that needed eating up and I've really been fancying some banana bread recently (I know, I live life to the max!!!! :) ) so we went for it!

I googled a recipe and found one on BBC that looked simple enough.

We didn't have cherries so we used dates and I halved the recipe. I also didn't want to wait for the hour+ cooking time, so we made muffins instead (which cooked in 25 mins).

I guess it depends on what size muffins you are looking for but the recipe said you could make 24 and having halved the recipe I made 7.....! I don't know what's right or wrong but we thought our size muffins meant we had a good proportion of "bread" to "crust". The Little Coeliac isn't too keen on the edges so I thought it would be better to make slightly larger ones. Up to you though!

As I say, we did add dates which made these sweeter but The Little Coeliac and her brother happily ate them this evening for pudding. I may also have tried one and may similarly have thought they were yummy!!!!!! I think tomorrow they will be great toasted.

All in all, an easy, quick recipe that worked well. Definitely a thumbs up to this!
