Let's Eat #5, honeycomb

This is only a very short post but I have to share it because I couldn't believe how easy it was to make and how good it tasted!! It was also pretty fun to watch!!!!
I had the idea of putting honeycomb in my cheesecake and I found a recipe for it so I thought I'd give it a try. I only wanted to make a small batch so I used a little flan tin but with hindsight, even with a half batch, it would have been better to use something a bit deeper so that it had more space to bubble up - that would give a deeper amount of the more open, "honeycomb" texture in the centre, which would have made it even better. I had to quickly scoop some of my mixture out which wasn't ideal.
Anyway, all you need to do is melt sugar in golden syrup (I said it was easy, not healthy!!!), add some bicarbonate of soda, beat, tip into a tin and watch the magic!!!
The mixture bubbles up and expands a lot!

In case anyone is wondering - no, I didn't let the children help with this (bubbling molten sugar mixture is definitely a step too far!) so I know that strictly it shouldn't be on here (a blog specifically focusing on child friendly things) but I was amazed at how great the result was and the big kid (Daddy!!!) in the house couldn't get enough of it so I think it was a success!! TLC did also love watching the mixture bubble up and magically turn into honeycomb - from a distance.
