Let's Eat #6, fairy cakes

So we went to Sainsbury's to get some of their new gluten free tortellini but unfortunately they'd sold out. We checked out their new Deliciously Free From range while we were there too and it looked great. Options which are milk, egg and gluten free, including cheese! Really good to see more fresh gluten free options coming on the market.

Anyway, we got home and were a bit disappointed that we were empty handed so we thought we'd make a little treat. I am going to start making some more of the Deliciously Ella recipes - they look amazing and the oat and date bars that I made last week were great - but I need to stock up on ingredients for that so we went for something nice and easy that could made from ingredients that we had to hand and decided on fairy cakes.

The last time I tried to make gluten free fairy cakes they ended up flat and rubbery! We found a recipe on the Doves Farm website (https://www.dovesfarm.co.uk/recipes/quick-fairy-cakes) and thought we'd give it a go. We used doves farm flour and followed the recipe as it's written except that we divided everything by 3 and that made 6 cakes. We didn't need loads of cakes - just a little treat for pudding! The recipe was easy to follow and at the end, we added a little twist of a couple of hidden chocolate buttons... mmmmm!

The results were great. Really light and fluffy cakes, not too sweet, not crumbly but not rubbery either. Just really great! TLC announced that "those cakes were really amazing". Can't get much higher appreciation than that!! :)

Would definitely make these again.
