Let's Eat #13, White Bread

This was almost perfect!!! For once, my yeast mixture went really bubbly, we left the dough to prove and it doubled in size, the loaf was light and airy and had a lovely crust, I just used the wrong sized loaf tin!!!! 

It was a somewhat last minute decision to do some baking. We'd had a busy day and everyone was getting hot and bothered so I thought we'd watch 10 minutes of TV to cool down. We watched I Can Cook and that got us onto the subject of cooking and TLC decided that she would like to make some bread. We've been given a couple of new cookery books recently but neither of them had any bread recipes in them so I reverted to our old favourite - Nosh! 

There are quite a few recipes in there that I'd like to try but we were short on time and I didn't have all of the ingredients for some of them but the plain loaf was simple and we had what we needed! 

I halved the mixture as I only wanted a small loaf and that was the start of my problem! I used Doves Farm bread flour as that always seems to work well. Made the yeast mixture (with what must have been just the right temperature and just the right amount of sugar!) which bubbled up well, whisked up the egg white (which the children loved holding over Daddy's head to check it was firm enough 😆) and folded everything together. We left the dough in a nice warm spot and as I say, it doubled in size but because there was space in the tin, it got wider rather than taller! It still tasted lovely but looked a bit flat!!! Next time I will use a square tin so that it expands upwards! 

Nice easy recipe though with great results!
